Butterscotch, Pretzel & Chocolate Chip Cookies

I came across a ton of these recipes on pinterest and just had to recreate one. I tweaked a few things from some of the original recipes and love the outcome. I know each one of you have had those stressful days where you just feel the need to come home, lay on the bed with your shoes on and enjoy a cookie or three. Lets do this. 

Ingredients: 
2 cups & 2 T. all purpose flour 
1/2 t. baking soda
1 1/2 sticks of salted butter
1 c. packed brown sugar
1/2 c. sugar
1 egg (room temp)
1 egg yolk (room temp) 
1 t. vanilla extract
1 t. almond extract
1/2 c. chopped pretzels
1/2 c. chocolate chips
1/4 c. butterscotch chips 



Directions: 
Preheat oven to 325
Mix flour & baking soda, set aside.
Use an electric mixer, or stand mixer to cream the butter & sugars together. 
Add egg, egg yolk, vanilla & almond extract. 
Gradually add flour mixture and mix well (DON'T OVERMIX, just enough to combine ingredients). 
Fold in pretzels, butterscotch chips and chocolate chips. 
Chill dough for at least 30 min. in the fridge. 
Place dough on an ungreased baking sheet, add a few chips & pretzels on top for decoration.
Bake for about 8-10 minutes, or until lightly golden around edges.
