Lemon Poppy Seed Muffins & Strawberry Whipped Butter


Do you ever have those random cravings for bad (bad) food? I know you do. Well early Saturday morning, I was sitting in my family room watching Netflix (Friends re-runs, naturally) on my laptop. Out of nowhere I had this random craving for lemon poppy seed muffins. I ran to my kitchen and checked my cabinet to see if I had all the ingredients, and I did (enter ecstatic emoji here). These lemon poppy seed muffins were crazy good ya'll and stay for the strawberry whipped butter recipe at the bottom! 

You'll need:
(Makes 12 Muffins) 
2 Eggs
6 T. Unsalted Butter 
1/2 c. White Sugar
1/4 c. Brown Sugar 
Grated Zest of 2 Lemons 
Juice of 1 Lemon 
1/2 c. of Milk 
1 t. Vanilla Extract 
2 T. Poppy Seeds 
Pinch of Salt 
2 1/2 c. All-purpose Flour 
1 T. Baking Powder
1/2 t. Baking Soda 


Whisk the eggs, unsalted butter (melted), white sugar, brown sugar, lemon zest, lemon juice, milk, poppy seeds, salt and vanilla extract together in one large bowl. In another bowl, whisk the all-purpose flour, baking powder and baking soda together. Slowly add the dry ingredients to the wet ingredients, DO NOT OVER-MIX! 


Use an ice-cream scoop/cookie scoop to distribute the mix into your muffin pan. Bake your muffins at 350 degrees for 15-20 minutes.



These muffins are delicious without anything, however, this strawberry whipped butter takes them to an all new level. Did I mention there are only three ingredients and it only took a few minutes!? 

You'll need:
1/2 c. Strawberries, diced.
2 Sticks Unsalted Butter
1/4 c. Powdered Sugar 


Soften your butter, add in your powdered sugar and strawberries. You can use the mixer just to get a nice pretty pink color!
